This project successfully merges traditional craftsmanship with cutting-edge control systems to optimize meat preservation.
CAREL’s Ultracella Technology
The initiative was inspired by Dario Cecchini’s ambition to facilitate a slow, natural curing process that prevents surface drying and maintains the meat's organoleptic properties. CAREL’s Ultracella technology is key to this achievement, allowing coordinated management of temperature and humidity.
The system uses CAREL’s electronic ExV valves to precisely control dehumidification. Moreover, the boss supervision system enables remote monitoring and maintenance, ensuring a stable and high-quality curing process.
