CAREL has provided the technology for precise temperature and humidity control in the Guglielmi Stagionatura facilities, ensuring energy savings and the artisanal quality required.

Guglielmi, a long-established company active in the cheese ripening sector for over 50 years, stands out for the quality of service offered to numerous Italian dairy cheesemakers, particularly for hard cheeses.

Goal of the new system

The installation, carried out by Merenti Refrigerazione, involved two warehouses of 4,000 m² each, located in Valdastico, in the province of Vicenza.

The ripening process is a crucial phase in cheese production: it directly affects the taste, texture, and quality of the final product. The goal of the new system was to ensure stable and precise environmental conditions for an optimal ripening process, while also reducing energy consumption.

Integrating advanced features

The installed solution led to an overall energy consumption reduction of around 30%

The CAREL system, based on the programmable controller c.pCO5+ and a custom application, allows accurate control of temperature and humidity, integrating advanced features such as free cooling, in which a damper is activated in order to let in outside air when weather conditions allow.

The E3VZ electronic valves and EVD EVO drivers ensure precise refrigeration control, while an external rack managed by the pRack pR300 controller optimises floating condensation and heat recovery. The installed solution led to an overall energy consumption reduction of around 30%.
